Gluten Free Pumpkin Chocolate Chip Muffins

Officially Gluten Free

These Gluten Free Pumpkin Muffins are Moist andย Chocolaty.ย

Ingredients

1 1/2 Cups of Canned Pumpkin

2 Tbsp Olive Oil

1/2 Cup White Sugar

1/2 Cup Brown Sugar

1 Cup Rice Flour

1/2 Cup Tapioca Starch

1/2 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Cinnamon

Directions

1. Pre heat oven to 350 F

2. In a large mixing bowl, mix pumpkin and oil.

3. Add sugars and blend well.

4. Add rice flour, tapioca starch, baking powder, baking soda and cinnamon. Mix just until blended.

5. Add chocolate chips, then spoon into a lined muffin tin.

6. Bake for 30 minutes.
